Red Pepper and Sweet Potato Soup
Instructions
- Heat the oven to 190C.
- Chop the potatoes, peppers and onions and place in a baking tray.
- Add the paprika, salt, pepper and oil.
- Roast for 30 minutes.
- Blend the vegetables with the coconut milk, chicken stock, chilli flakes and maple syrup.
Ingredients
- 2 sweet potatoes
- 2 red peppers
- 2 red onions
- 6 garlic cloves, peeled not chopped
- 2tsp paprika
- 400ml coconut milk
- 400ml chicken stock
- As many chilli flakes as you like
- 2tsp maple syrup
- Salt and pepper
- Olive oil (around 2tbsp)
